Petaluma Catering was conceived and designed by our Executive Chef, Gary Buehler. The company is named for a small town in Northern California which Chef Buehler visited in the early 1990s. He came to admire the location, the wine country and the use of locally grown organic foods.
Chef Buehler has been cooking and catering in Dallas since moving here from New Orleans in 1985. His first venture, Dallas City Foods won several awards for excellence in innovation and cuisine. This company produced food products ranging from custom smoked seafood and charcuterie to appetizers and hors dâ€™ oeuvres for several prestigious companies such as Flying Lobster, Lowes Anatole, French Express, Sky Chefs and the Crystal Charity Ball.
Chef Buehlerâ€™s s catering experience in the Dallas-Fort Worth market is varied and extensive. In 1999, he purchased Mr. Gilâ€™s Elegant Catering from Mr. Anselmo Gil and grew the company into a multimillion dollar enterprise. In 2006, Chef Buehler conceived and opened Dallas City Market, a gourmet food and wine store in the Park Cities. His catering experience varies from the Luncheon served to Princess Margaret and Prince Phillip in 1993 to the Cattle Baronâ€™s Ball in 2007.
Ever the independent entrepreneur, Chef Buehler left the catering company he built in 2008 and opened Petaluma CafĂ© in Cedar Hill Texas. That same year, he and his wife conceived and opened â€śMax n CheeseÂ®â€ť, an upscale custom food court concept also in Cedar Hill. Although the restaurant was given much critical praise, Chef Buehler decided to sell the restaurant in 2010 and return to his catering roots.
Originally in the Design District, Petaluma Catering is now operating in its fourth year in a new kitchen space inÂ Preston Hollow. We specialize in upscale corporate catering in the downtown Dallas market, but we service all areas of Dallas-Ft Worth and the Mid Cities.
Over the last 30 years, Chef Buehler has traveled extensively in the United States, Latin America, Asia and Europe working, cooking and studying cuisine in a wide array of places with world renowned Chefs and aficionados of food and wine.
